Chitterlings or chitilins is a food that come from pig instestines. Back in slavery times, slaves normally ate these as well as scraps of leftover food, corn, bacon, etc. Today many people still eat chiltlins, including my family. My grandaddy was born in Mississippi and many Mississipians still love chitlins. My grandmother would love to make a big pot of chitlins for special occasssions like Christmas. Many people don't like chitlins because they come from pig intestines and they can smell horrendous. Eww! Just throw a little hot sauce on top and they're now a delicacy.
