 My grandma would always cook these scallion pancakes for me and my mom whenever I visit her, and I just fell in love with the taste of them. Scallion pancakes are just dough and scallion mixed together with a lot of salt and oil to fry them. I don't know exactly how long ago when my grandma learned to make them, but all I know is that she knew before my mom was born. Every time my grandma would come visit she would bring the materials to make scallion pancakes with me. Although she hasn't come to visit me for a while due to the Covid; I vaguely remember how to make them. First you combine water and flour to create dough, then add yeast and wait for a while, next you massage scallions and oil into your dough, lastly you pan fry them to a nice golden brown. When my grandma and grandpa were younger they owned a little restaurant in New Jersey that was authentic Chinese food because after all they are immigrants. My grandparents have a very limited English vocabulary, and they love it when I communicate with them in mandarin.  My grandparents fled to Taiwan when World War ll was getting really dangerous in China, and when they had my mom and aunt they moved to New Jersey for a better life. I haven't seen my grandparents in two years, and I can't wait to get back to cooking with my grandma when Covid is over.
