The potato pancake is a staple dish of dozens of cultures around the world, from Iran to Korea to Ireland. My grandfather always made potato pancakes for my family when I was growing up. I always assumed he learned to make them because of his Irish and German heritage, but it turns out he learned to make them because his family was so poor when he was growing up and the potato pancake is such a cheap dish to make. He said that his brothers and himself would hunt wild squirrel to go along with the dish as an extra treat.
