 One of my family's favorite meals is upside down, but in the middle east it is known as “Maqluba.” My grandpa originated from Jordan and immigrated to America in the 1960s. When he was a kid back in Jordan, He would eat this dish all the time and it was one of his favorites. When he immigrated to America he wanted to keep Middle Eastern culture in our family by always cooking middle Eastern food for us in Florida. He always pushed everything aside to make time to cook this for my family. We always looked forward to eating this meal on every holiday and family gathering. Upside down consists of rice, chicken, and fried vegetables. You put everything together in a special pan, put it in the oven, when you take it out you flip it upside down on to a dish. This meal is very special to my family because a few months ago my grandpa passed away. Upside down or in my grandpa's culture “Maqluba '' will always be so significant to my family because this reminds us of my grandpa, my family's culture and all the good memories we had with him. This recipe has been passed down many generations and I hope we can pass it down many more.
