Lomo Saltado

 The Peruvian people have welcomed many other influences from different countries in order to prepare their meals for a large family on a low budget. While growing up in Peru my mom would make Lomo Saltado. This dish consists of rice and beef, which are staples in most of our daily cooking. Then she would add in french-fries which is popular in American cooking. We typically would eat our potatoes either baked or boiled in order to not waste oil, but whenever we had fried potatoes such as the french-fries in the Lomo Saltado it was a treat for us. My mom would serve this dish for me and my brothers during lunchtime because it is the main meal of the day as opposed to dinnertime in America. When we saw this dish at the table we would always get excited. Since potatoes are a popular crop in Peru we have used many different types within this dish, it is a comfort food that always reminds me of home now that I am in America.
