In Zambia we have many different dishes that have fish in them. One dish that is very popular is called Kapenta. Kapenta is a fish that is similar to a sardine; we dry it up and use them to cook with. Sometimes we include spices and sometimes they are served with rice or shima. Typically this dish is eaten during lunch or dinner time. There is a large supply of this type of fish in Zambia, but it is difficult to find in America so I have only made it a few times while being here. Every time I’m able to have this dish it’s special for me since it reminds me of back home.
