Italian Orange Sauce
My object is a recipe for a delicious Italian pasta sauce. The original recipe comes from a cookbook called ESSENTIALS OF CLASSIC ITALIAN COOKING by Marcella Hazan. It actually is not called orange sauce, the name in the book is Tomato sauce with olive oil and chopped vegetables ( there is also carrots in it which makes it orange!)
My grandma Ricci made it for my mom and my moms sister a lot as a kid, and now my mom makes it for me! My mom really loves eating and making it so much. It was the only thing she asked to learn how to make when she moved out of her parents house and made it a lot for her friends! Whenever she makes or eats it ( sometimes I help make the pasta) she thinks of her italian ancestors and feels really connected to her Italian heritage. It's the same for me. Recipe for Orange Sauce
- For 6 servings
- 2 pounds fresh ripe tomatoes or 2 cups canned imported Italian plum tomatoes(cut up with their juice)
- ⅔ cup chopped carrot
- ⅔ cup chopped celery
- ⅔ cup chopped onion
- Salt and pepper (not too much!)
- ⅓ cup extra virgin olive oil
- 1 to 1½ pounds of pasta
- And finally… Mangia!! (eat up)
