Hi there, my name is Manuel and my family is from Mexico. My family and I are really proud to be Mexican. We keep our culture alive by eating the food from our culture. Have you ever heard of Enfrijoladas? If not, let me teach you about one of my favorite Mexican dishes. Enfrijoladas is actually a pretty simple dish. You make it by frying a corn tortilla, you also need to put cheese in the middle and then black beans on top with shredded cheese sprinkled on top of the beans. You might also wanna put it on a plate because if not the beans will drop on the floor. Thursdays and Fridays are the days I look forward to eating Enfrijoladas because those are the days I usually eat it. At first you may think “Ew this is disgusting” but then when you try it you might say OMGGGGGGGG ThIs Is ThE BeSt! I'm 100 percent sure you will like Enfrijoladas. My mom definitely makes the best ones. I feel so good when eating them - it feels like living the dream!
