Soup Joumou is a Haitian tradition used to celebrate new beginnings and freedom. Soup joumou is served on January 1 to represent Haiti's independence from France. January 1, 1804 is the day Haitian slaves and a revolutionary leader Jean-Jacques Dessalines declared Haiti's independence from the French colonists. The soup was then used as a symbolism of Freedom.
