The Israelites had to flee Egypt so they didn't have time for the bread to rise. So that is why you are supposed to make matzo with no yeast.
The PlateKarpas (parsley) is the vegetable that represents spring, you dip it in salt water, which represents tears. They cried when they were enslaved by the Egyptians. Matzo is unrisen bread. Beitza is the egg that represents the circle of life. Maror (the horseradish) represents the bitterness of when the Egyptians enslaved them. Charoset is basically a mixture of fruits but it is made into a paste. It represents the mud they used to stick bricks together for the Egyptians.
