Pizza
I would like to tell you about the pizza that my Italian grandma makes from scratch. She starts by making the dough with the following simple ingredients: water, flour, potatoes and yeast. She mixes these and kneads the dough really well before letting it rest to rise. Once rested, she forms balls that she flattens out before dressing them with tomato sauce -homemade obviously- mozzarella, and any toppings we desire, olives in my case. After letting it rest a little longer she puts it in the oven for about 25 minutes. While in the oven the house starts to smell heavenly and all grandchildren cannot wait to grab a slice.
My grandma reminds me of the love Italians have for food. She knows many recipes that have been in our family for generations. I do not know where she got the pizza recipe from or when she made her first pizza.
Time to find out and for me to learn! When I go to Italy for summer I will spend more time with my grandma in the kitchen to learn all her secrets and become the best pizza chef of the family.
Pizza is a really important dish in Italy and having pizza is always a celebration. When I am in Italy everyone is happy when my grandma prepares pizza because everyone will come together and that brings not only for my grandma, but for all of us joy and happiness.
