Ceviche
My name is Karen. I have 2 beautiful babies and my grandson. He was born in the US. I came here in 2010 and I'm working 3 jobs where a lot of bad things happened and a lot of good things as well. I was discriminated so many times, I can't even count. But God always gave me good people, too.
I worked hard because I was a single mother and I know more than anybody what poverty is like. But I mean real poverty.
Even though I still haven't accomplished everything in my life, I know that now I am a very blessed woman and I have a very large family and all of my family lives in the United States. Except my parents, but they come to visit all their children. We are 7 siblings, 3 brothers and 4 sisters. Today I dedicate myself to helping the people understand that their health is principle and eating the best and most healthy because I lost a sister through Diabetes. Since then I've changed my life and my perspectives. I really missed Peruvian food during the first 2 years but now I cook at my own house and I show the people how to take care of themselves.
