Peking duck wrap

My item is “Peking duck” wrapped in roti with celery beside the duck. My family and I eat it on both Lunar New Year and I guess I can call it “New Years?” Anyway, Peking duck is a dish from Beijing (Peking). The meat is characterized by its thin, crispy skin, with authentic versions of the dish serving mostly the skin and little meat. Ducks that have been bred have been slaughtered and hung for 65 days before being roasted in an oven. The meat is often eaten with spring onion, cucumber and sweet bean sauce with pancakes rolled around the fillings. Sometimes pickled radish is also inside. Now that you know what peking duck is, I guess I can tell you why I chose this dish.My father’s family originated in China and my Dad is crazy about his culture, just like me. Though, my father was born in Jamaica. He immigrated to the US when he was 13. From what my dad told me, My grandfather’s family was from china. Sadly he died way before I was born. If he were still alive I would ask him what China was like, was it beautiful like all the pictures I’ve seen with the pink cherry trees starting to blossom, sky with a sunset like no other, tall mountains with temples on top and bamboo. I wish to someday travel China, maybe I’ll find out more about my culture there.
