Egyptian Couscous

Couscous is a traditional African dish that is very important to me and my family. As a child, my mother used to make this dish all the time, and I remember being excited when I saw she was making it for dinner. The actual Couscous is the little balls you can see in the photo, but to me, I always had couscous with many other ingredients, as it is usually served. The flavor is rich, and the couscous provides texture to the dish. It is a traditional dish of Egypt, where my mother’s side of the family is from. Egyptian couscous is called “Maftoul” and has a completely different flavor and texture than other regional versions of the dish. My grandmother also used to make this dish a lot, which contributed to a lot of my childhood memories, and this dish will always hold a special place in my heart.
