Mole (dish)
When my immediate family and I immigrated to the U.S from Mexico in 2005, we of course brought some stuff but it all got lost or donated throughout our lives. Regardless of this fact, Mexican culture and traditions are very present in our family, whether it’s food, holidays, or speaking Spanish in our household. One of the major attributes of our culture is the recipe of mole which is a thick, flavorful sauce usually coated on chicken, and also a popular dish in Mexico. This recipe is important to me and for many first generation Mexicans due to the authenticity of it; mole is not commonly sold in the U.S or even known as much as other Mexican dishes. To many people outside of Mexico, this is an exotic dish to the various ingredients which include dried spicy peppers, nuts, seeds, tomatoes, onions, chocolate, banana, and spices. To this day, my mother cooks this meal at least once every two months because she knows how much it means to my sisters, my dad, and I. This recipe has lived as early as the 17th century and has of course been passed down generation to generation therefore I am highly grateful my mother frequently cooks this meal, and my sisters and I will make it a goal to frequently cook this meal when we have our own family.
