Every Christmas, my extended family gets together to make a delicious mountain of Lefse with lots of joy and laughter. Lefse is made out of flour and mashed potatoes, which we mash with our bare hands and it is very sticky, and shaped similar to a tortilla and cooked on a griddle. When it cooks, you can smell the sweet aroma of the freshly cooked lefse. It is usually served with brown sugar and butter, and is rolled up into a skinny burrito style. Lefse tastes so good and practically melts in your mouth. Lefse is originally a Norwegian food, but has now been traveling all over Europe. The recipe my family makes together is a Swedish and Norwegian recipe because my family is from Sweden and Norway. This food was brought into my life at a very young age when I had my first Christmas. We went over to my grandpa's house, and I sat in the bin of bagged lefse, a tradition that every baby has to do when they have their first Christmas. I was the first. Lefse is important to me because it makes me feel like I'm home and doing the things I love with the people I love. I adore making Lefse with my family and can't wait to continue the tradition with my family in the future.
