Freedom soup/ soup joumou

 Soup jou mou which means pumpkin/squash soup, really big in Haitian culture. This soup represents our freedom and is called freedom soup. The soup represents Haitian independence. The slaves would prepare this soup for the French, but would not be able to eat it themselves. The slaves rebelled against Napoleon's army. The fight occurred on November 18,1803. It was the only successful revolution of enslaved people in modern history. The declaration was signed on January 1,1804. Haiti was declared independent. To celebrate they made the soup and rejoiced in a glorious moment. Every year since, Haitian people prepare and make this soup for breakfast on the 1st of January. The hearty pumpkin or squash as the base with beef chunks, potatoes, spinach and collard greens and assorted herbs makes this soup something far from a light soup. This soup is not only delicious but a must have on the first of January in my culture.
