The colors of the flag mean, yellow refers to the abundance of crops and the fertility of the land. Blue represents the color of the sea and sky. Red symbolizes the blood shed in the struggles for independence. The Flag means to me a very sacred flag because it represents many things such as struggle, freedom and honor. Every Monday at school we sang the national anthem of Ecuador. Our ancestors fought for us to be free.
Encebollado is a typical food from Ecuador. The encebollado is made with:

• Fish
• red onion
• vegetables
• Yucca
• Albacore
• Tomato
• cilantro
• chili powder
• cumin

It is important for special occasions. Encebollado is a fish broth. It is also accompanied with chifles that are eaten at the time of tasting. I remember that every Sunday after going to church we learned how to eat an encebollado in a traditional plate called “una ocho”.-D
