Bright Red Ceviche
My traditional homemade Ecuadorian ceviche is a memory that remains in my heart and reminds me of my roots. Whenever my family and I prepare our ceviche, the whole house brightens up. This dish relies on blended tomatoes that create a bright broth, topped with plump shrimp, minced green cilantro, and slices of purple onion. The vibrant red broth is as bright as a sunset, making this beautiful dish stand out to everyone at the table. While we blend the tomatoes and squeeze fresh lime juice, a sharp aroma spreads throughout the house, making everyone run into the kitchen. One of my favorite memories is eating ceviche on a hot summer day with my entire family at the park. The sun was shining brightly onto the ceviche, which made its bright red color stand out even more. For my family, ceviche is more than just a dish; it is the spark of our family gatherings.
