Borscht
This is Borscht, which is cold soup made from beets. It's a traditional Ukrainian soup and it is important to me as a Ukrainian. My mother makes this delicious dish many times a month. Since we are all busy in America working and going to school, we do not make it as much as when we were in Ukraine. This is why it is especially important to me and I appreciate it when I do eat it. Not only does it taste good, but it reminds me of my home village. There is no specific story about it, the reason why it's important to me is because it reminds me of the place where I was born, raised, and all the talks me and my family had while eating it. These are such important memories which I cherish. This soup contains beet, sunflower oil, tomato paste, citric acid, carrots, 3 onions, water, some meat, bay leaf, spices and some greens (I'm not sure what greens though). Then you just boil it, but you must cook the meat first and cut all the vegetables. This was my great-great-great grandmother’s receipt. My mother still follows it today. As I get older, my mother will show me how to make it the right way, and I will be able to show my children, if I ever even have them, so that this recipe doesn’t die, since at this point, it's the only thing that reminds me of my village.
