Aguachile
This dish is called aguachile, its a mexican dish made out of shrimp, submerged in liquid seasoned with chili peppers, lime juice, salt, cilantro, and slices of onion. Other ingredients also include cucumbers. When I first got a taste of this dish, it had a lemony/jalapeno taste but at the same time, there would also be spices that I wasn't yet familiar with. On top of this platter, there would be onions and cucumbers, which gave it a lot of good tasting flavors. In addition to that, it would also have a bit of spiciness to it. After I tasted it, I was instantly hooked. We would eat this at least once a year, therefore I have to wait until next to eat this again because we just ate it a few weeks ago. Last time when my mother made it, she made it a bit differently, she would blend the lime juice with the jalapeno and pour it on top of the shrimp, cucumber, and onions. She would also leave it overnight so that all the flavors could mix and become more delicious.
