A simple breakfast dish that I can never forget, eggs with tomatoes and rice on the side. This dish was introduced to me at the age of 14 from my amazing mother. I was never a good cook or I never even knew to cook. The only thing that I would intend to cook with is the microwave, though it isn’t technically cooking. But in the summer of 2024 of starting freshman year, early in the morning where my ears are getting scraped by my mom’s voice. I rushed downstairs with messy morning hair to satisfy my mother's orders. She orders me to cook breakfast while she gathers vegetables from the garden to sell later at the farmers market. Then she scolded me a bit for not knowing basic cooking skills. From that moment, I learned how to cook without heat struggles along with seasoning and from there, it is the only dish I can only think about when I am starved for food. I picked this dish to write my story because it is a homemade comfort dish where I first learn to cook and the very first dish my mom taught me. It can be a breakfast, lunch, and dinner dish. A dish where I look forward to whenever I see eggs or tomatoes. It is also a dish that I can make easily if I'm sick but what I loved most about this dish is how it reminds me of my mom. She is the first to teach me this dish with my favorite vegetable and the first to show me how to season.
