The Family Spaghetti
The Family Spaghetti
I am a 5th generation American, and in my life I've never really questioned where I came from, but this past year I've asked a lot more questions about my family, one of the things that stuck out to me was the story of my great grandfather george dixon. When his parents came over to Ireland in the aftermath of the great potato famine, they moved to east St. Paul to build a life there.
Growing up they lived poor and because George didn't have any Irish recipes or cookbooks, he drew inspiration from what was the second fastest growing immigrant population in St. Paul, the Italians, he created what is now the cornerstone of meals in my family. What makes the Family Spaghetti special lies in the sauce and the meat. We use spicier sauce than normal with chopped peppers mixed in, the second part is that we use chopped pepperoni sausage from Cossettas. When he wrote the recipe it became the favorite meal in his family, it grew to his entire family, when my grandma was in college George suddenly became sick with multiple sclerosis and died, it was really difficult for my grandmother as she was the oldest child, My grandmother out of love for her father started cooking the family spaghetti almost every week.
When she met my grandfather, he immediately fell in love with it and quickly learned it. When they founded the Christian Cupboard emergency food shelf, they started cooking it in Large amounts at dinners. My grandmother taught my mother how to make it, its one of those things that connects people through generations.
