Spring Rolls
These are spring rolls or summer rolls, depending on where you're from. Anytime my mom's side of the family gets together, we gather in the kitchen to start making them. The process is quite simple: wet some rice paper and wrap it around beef, shrimp, cucumber, lettuce, and carrots. Somehow, I could never make them look nice- they'd look like balls instead of rolls, so everyone would make fun of me. As everyone got older, my grandma died along with my aunt and uncle. I can never recreate these memories to make them the same, but any time I order summer rolls at my favorite pho place, I think of them. The moments when my cousin spilled an entire bowl of water on my aunt or someone's roll would break apart on the first bite. I will forever be grateful that I had enough time to bond with them and all the memories to look back on.
