Every year when I would go to Greece, my yiayia(grandma) would always make me fresh spanikopita. This dish of spinach and cheese put in between crispy bread slices is one of the most important objects to me. Every year, we would visit Greece and I always looked forward to staying with her in Athens and learning about my culture. This is a staple of greek food, and my yiayia was very important to me and this dish always reminds me of her. Right behind the gyro, spanikopita is a staple of our culture. With Spanikopita appearing so much in restaurants here in shows how much Greek influences have blended into the American way of life (particularly eating).
