Recado
is an important dish of Guatemala and for me. The ingredients involved are tomatoes, onions, garlic, guajillo chiles, chiles pasa, sesame seeds, pumpkin seeds, and meat. My parents learned how to make this recipe thanks to my grandparents, who passed the knowledge down to them. To prepare it, you must first toast all the ingredients, then add a little water, combine everything, and blend it until smooth. Once blended, place the meat in a pot and pour in the blended mixture. Let the meat cook and the sauce come to a boil, and just like that it’s ready! You can serve it accompanied by rice. This recipe is important to me because it is a family tradition. We always prepare it for special occasions such as birthdays, weddings, or whenever we have good news to celebrate. I also enjoy teaching this recipe to my friends, cousins, or anyone else who isn't familiar with it. Here in the United States, I sometimes make it to reminisce about the time I spent in my home country. Whenever I eat it and taste that delicious flavor, it reminds me of my homeland.
