When I finally moved to the US, it was really nice. But as months and years went by, I started to miss my home. I started to realize things are really different from home, like the food and the way they live up here. My home, the land of many waters (Guyana), will forever be in my heart because of the people and the enjoyment it brings to life. Trust me when I say Guyana is a beautiful country; you can never have a dull moment there. The food over there is really good. One thing I really miss is the food, parade, music, and definitely the people. I'll always choose my country over any other, no matter what. One thing that is always on my mind that makes me want to go back is the food - our food is the best, in my opinion. Around Christmas time, we have a traditional dish called pepper pot, a dish that was past down from one generation to another. The best thing I ever tasted in my life; the flavor is really sweet and good. Pepper pot is a sauce that Guyanese make. You can eat it with rice, bread, or cassava bread. The sauce is made with braised beef and infused with cinnamon, clove, thyme, and wiri wiri peppers (a small red pepper that's native to Guyana). Whenever I eat this, I feel connected to home because of its wonderful smell and its sweet and delicious flavor. It is a very flavorful dish that every Guyanese household makes around Christmas time.
