Mole Poblano
This image of Mole poblano represents my families tough up bringing and culture. Mole poblano is a dark red or brown sauce served over meat and is culinary specialty in Mexico. My grandmother was taught by her mother how to make it in Puebla. It is a city in eastside Mexico known for their culinary history, architecture, and pottery. She grew up very poor and the city was tough, so she decided to come to America with her husband (my grandfather). She was pregnant at the time, and her and my grandfather crossed the border illegally though a river hoping for a better life. This mole stands for the tough times by family had to go through, but with a sweet aftertaste. It was a struggle learning to adjust to the American ways for my grandparents at first, but they made it. They had my father, then my father had me, my sister, and brothers. This dish takes days to make and would only be made for celebrations. I only get happy memories with my family eating it and can taste my family's origins.
