Papa a la Huancaina
My object is a Peruvian dish called Papa a la Huancaina (Potatoes with Spicy Creamy Sauce)
I chose this object because this is part of my Peruvian culture. It is one of my favorite Peruvian dishes.It’s a cold appetizer of boiled potatoes in a spicy-creamy sauce, served over lettuce, decorated with hard boiled eggs and black olives.The sauce is made of Queso fresco (Fresh white Cheese), Aji Amarillo (Peruvian Yellow Pepper), Evaporated Milk, Saltine Crackers, Lime juice and Vegetable Oil mixed in a blender.I love to eat it before I eat my steak. This food is part of my dad’s heritage. My Abuelita used to prepare it for him when he was a kid, and now he keeps the tradition preparing it for me.
