Matzah is unleveled bread that hasn't rised for more than 15 minutes. It is a big part of Jewish cuisine and is eaten during Passover when bread has raised, grains, corn. this happens during Passover because when the Jewish slaves were escaping Egypt they didn't have time for the bread to rise and had to leave.
