Kasav Ayisyen
“Kasav Ayisyen” or “Kasav ak Mamba” is a starchy root vegetable that’s native to South America, but became a staple in Haiti (especially Cap Haïtien). It was typically frowned upon as “poor people” food, but became increasingly popular with the rise of bread prices since the COVID-19 epidemic. It’s made with fresh cassava flour that is grated and dried, with fillings such as coconut, cinnamon, ginger, and sugar. It also can be served with peanut butter and is a very common breakfast/snack. My family has always bonded over this food, as we sit at the table and eat Kasav together with a cup of coffee.
