Jerk chicken is one of the many things that make Jamaica special. Made on a grill made with pimento wood and marinated with browning and jerk sauce, jerk chicken is exquisite. Jerk chicken is special to me because it reminds me how far Jamaica has came from 60 years ago. I also chose my family because no matter what they always find a way to make light when it’s dark.
