The best food I ever had was griot. Griot was made in the 13th century It is a Haitian dish usually made by my dad because it's his side of the family. Griot is made up of 3 dishes of fried pork cut into bite-size pieces. Cabbage and french cut tossed in vinegar, ghost peppers, and seasonings. Lastly, griot is made with pressed down and salted fried plantain. Every other Saturday my dad would make me and my sister griot when we were in Florida so I fell in love with the taste and still try to replicate how he makes it. This dish is very important to me because it reminds me of my dad since he is in Haiti and I can't see him every day. Even though my dad is in Haiti I still call him to help me make the dish.
