Fufu with Egusi Soup

Every once in a while, for dinner, my parents will cook something called Fufu or Eba, which is called by its native name in Nigeria. My parents are both part of different tribes, but when they met, according to them, the food stayed the same. My Dad specifically tells me of his Family back home when they would have dinner, how they would share a mound of Eba and soup with His brothers and sisters, and all talk and eat over something they enjoy.  Eba is a Doughy like texture of a food, and it is made of yams or Cassava which could give its white or yellowish color. The word itself means "mash" or "mix" or sometimes can even be called "Swallow" This food is the main way i get answers to different parts of my parents' culture, and it was the first thing I was exposed to when I was young that was not just American food, even though I was born here. it alwasy opend up further questions, and in return i got more housewarming stories from my Mom and dad about their experiences not only with this food but different foods too. To this day, it remains one of my Favorite Africa dishs that my parents make, and I know each time I'll learn something different from them when we all sit down to eat
