Empanadas
The empanada is an important dish in my family. My mom would always cook it knowingit was my favorite thing to eat. An empanada includes a handmade tortilla, added withshredded chicken and shred cheese. The empanadas are often deep fried golden andcrispy, they give them a good texture and flavor . They are commonly served as a streetfood appetizer mostly in Argentina and Chile. There is also where you can just addcheese by itself or also beef, the one you prefer. In different countries they make itdifferent like adding Mexican caramel (cajeta). My mom knows I like it with salsa so shegets 2 tomatoes, 2 chiles, salt, and cilantro and blends it all together.My grandma never taught my mom how to cook, my mom would observe and just takenotes when she got the chance to. My mom knows how to cook everything my grandmadid since she would observe. My mom was born in Oaxaca and whenever she crossedthe U.S with my dad that's when she learned and started to find tutorials because whereshe is from they do things differently. This dish is very important to me because it issomething that me and my family grew up eating. This was also my dads favorite foodand my mom would make it whenever we were craving it. This is also something that Icherish since it's made by my mom and she puts her special receipt which is justadding lots of love into it.
We make empanadas for special events like birthdays or holidays such as Easter,Christmas. Every time my mom makes empanadas it shows how special the occasion is and that's why this dish is very important to me
