Coconut Rum Pancakes

These are my grandma's famous pancakes, a food item that has been passed down for the last 3 generations. It all started in 1934, when my Great, Great Grandma decided she wanted something sweeter than normal pancakes, but also something that had a kick to it. Living in Maui, Hawaii at the time, drinking was not uncommon, as tourism was blooming and the Prohibition had just ended. Tutu’s husband, James Hoser I, an american tourist whom she had married a few years prior, was an avid drinker. After the prohibition, James became increasingly addicted to alcohol and became easily irritated without it. He soon began to resort to violence against Tutu. But, no matter what he did, she still loved him for who he was before he became an alcoholic. She decided that for her special kick she would secretly buy Rum from a friend of hers who had been illegally producing it. So, to please him, Tutu poured about a ⅛ Cup of Rum into her coconut and flour mixture. After she finished the pancakes, she told James to taste them. He loved them. Incredibly, if she made these pancakes for him, he no longer felt the extreme urge to drink. Over time, Tutu would regularly make these pancakes for James, slowly curing his alcoholism through her cooking. Today, we hardly use any Rum at all in the recipe, as overtime my fathers side of the family has developed a genetic “allergy” to alcohol. Now, every family on my dads side has this pancake recipe in their kitchen, and every year we make them as a family during christmas.
