Spanish Chicken and Rice

My family has always carried certain meals and traditions that are meaningful to our culture. One meal in particular that has been carried throughout the generations of my family is Spanish chicken and rice. This is a very simple,  yet meaningful meal to my family. When my family decided to move to this country over 25 years ago from Mexico, Spain, and Colombia, they brought with them traditions, like the food they ate. This was really all they could bring to a new country, which is why it is so important. Throughout the years this meal has been used for parties, birthdays, holidays, and even casual dinner. This meal is created simply by taking chicken, cutting it up and using certain seasonings and spices, and adding it to Spanish rice and beans. This has always been a way to reflect on my culture that I came from.
