White-Cut Chicken
White cut chicken is a famous traditional dish in my hometown. It is said that during the Qianlong period of the Qing Dynasty, there was a chef named Chen Linquan in Chaozhou, Guangdong Province, who created this dish in the Chaoshan region, which is more light and refreshing, tender and delicious because the cooking method uses only simple boiling or steaming. During the Chinese Lunar New Year, white cut chicken is usually served to guests and family and friends. In Guangdong, on the seventh day of the seventh month of the lunar calendar, which is also known as the traditional "Tanabata Festival" in China, white cut chicken is used to pay homage to the gods, and is then eaten to celebrate the festival. In addition, white cut chicken is also an important food in traditional festivals and ceremonies such as the Mid-Autumn Festival, Qingming Festival and Chongyang Festival, and it is also rich in blessings, so it has become an important part of the traditional Chinese cuisine. My grandmother immigrated to the United States in 2000, but when I arrived at the end of 2019, I was very uncomfortable with this unfamiliar environment and could not feel the taste of home. The good thing is that my grandmother would make this dish for me during traditional holidays, such as my birthday, and she would use it to express her blessings to me and let me taste the taste of home, which is also a way to express my homesickness.
