Flour, sugar, cocoa, salt, baking soda, vanilla, vinegar, water, and vegetable oil. The recurring sweet treat that shows up at every family gathering. Wacky cake. With love baked into it from 4 generations down. The warm, recognizable smell and the soft, chewy, chocolatey taste that reminds me of home and many, many memories. 1929, it's the Great Depression. The people are barely getting by. Resources are scarce and money is tight. In desperation for something to bring spirits up and limited ingredients, a new recipe was born. My great-great-grandmother mixed the ingredients together and made a cake that would be repeated countless times over many years. Creating more memories every time it is made. No eggs, no milk, no butter, and powdered sugar substitutes for frosting resulting in a vegan cake, making it perfect for vegan family members too. After many years of making this cake, my grandma has the recipe down to a T and knows it by heart. I believe the origin story of this recipe is a good reminder to try and make light even in dark situations.
