 The pozole is a traditional Mexican soup, this meal is cooked by all families to eat at any time, it is not specific on a special date. But where this food can not be missing is at Christmas or New Year, my family cooks pozole to eat with the whole family. But the most common occasions include Mexico's Independence Day, birthdays, Christmas, New Year and other parties. This meal is prepared with corn, meat and can be seasoned and decorated with lettuce or shredded cabbage, peppers, onion, garlin, radishes, avocado, sauce or lemons.
This is a soup that is eaten hot, and my family also cooks it in three types of variety, they cook it in green, white and red, that these colors also have the Mexican flag, and this food is represented as Mexican. The white pozole is the preparation without any additional green or red sauce. The green pozole adds a rich sauce based on green ingredients, which possibly includes tomatillos, epazote, coriander, jalapeños or pepitas. The red pozole is made without the green sauce, instead, add a red sauce made from one or more chiles, such as guajillo, piquin or ancho. The pozole can be prepared in many ways. All variations include a corn base cooked in broth. Usually, pork, or chicken, is included in the base. The pozole is prepared more when the whole family is there, and we all eat together, it feels better to eat with the whole family. This is how we represent ourselves with our country. Mexico
