Pozole rojo
My favorite food from my country Mexico isPozole Rojo:This is a recipe that my mom had taught me whenI was 12 years old.Process;Cook the corn, a whole onion, the head of garlic over low heat for 2 hours, with enough water in a medium saucepan [8 liters].After this time, add the meat cut into small pieces, a pinch of marjoram and the 2 bay leaves. Continue cooking over low heat for another 2 hours.
Separately, pass the chiles through heated oil in a pan, taking care that theydo not burn, grind in the blender and add. Since the 2 hours have elapsed since the meat was added since it is soft, well cooked, add the blended chili and oregano and salt to taste and leave it cooked for 20-30 minutes and that's it. For me, the red pozole represents my country and my mother’s love
