My dad cooks up amazing Jamaican Fried Plantains, it's a juicy snack to eat usually in the morning which I think is the best time to make them. The smell is delightful and somewhat nostalgic because I know my dad is cooking up some delicious plantains. My dad cooks it inside a pan oiled up in vegetable oil then he cuts slices off the banana looking plantain into the oily pan. Personally I like the thinner slices because it's crispy but I also like the thicker slices because they are more juicy. Once it's done, he puts all the slices onto a plate with a paper towel on top to dry up all the oil. After he puts the plantains on the plate I rush over and start eating them before my family eats them all. I don't know when and why my dad started making them but I know that my grandmother made Jamaican food when I was younger and before I was born, maybe she made them for my dad and he then learned how to make them? I'm wanting to learn how to make plantains and continue the tradition. My dads side of the family is from Jamaica, my ancestors were from Nigeria when they were stolen and brought to jamaica during the Great Atlantic Slave Trade to be slaves. I don't know what happened after that but 1 of my family members was from cuba. My grandma, dad, my grandfather I think, and siblings moved from Jamaica to Florida in the 80’s. That's a part of the immigration story, I'm also sure my grandmother made plantains in Jamaica.
