Pepper pot
It's Christmas eve and there's a phenomenal smell coming from the kitchen, I walk in and its pepper pot. When my mom makes pepper pot I can hardly contain my excitement.She only makes it once a year, so I savor every moment. Even though it tastes amazing you have to make sure you dont spill it cause you're not getting that stain out of your clothes. My favorite way to eat it is with my aunt's homemade bread, you can soak up the broth and it's delicious. Pepper pot is a Guyanese dish that can be sweet ,spicy, and savory. I like mine to have a nice spicy flavor to it. It can have different meats in it such as pork oxtail, or beef. When my mom makes it she adds multiple meats, the best meat is the oxtail, it's always juicy and it enhances the flavor of it significantly. The main ingredient in it is cassareep. This is the dark sweet sauce that gives it the nice dark color. Since pepper pot is slow cooked it always makes the meat extremely tender and juicy. It's one of the highlights of the holiday for me, second only to the presents!his is a staple food for my family on Christmas. This is more than a dish to me, it represents unity and family and is a reflection of my identity.
