Our Bengali nation has thirteen festivals in twelve months. And these thirteen festivals are made of many different flavors of food. One of them is Pantha Bhat(পান্তা ভাত). Pantha Bhat is a lightly fermented rice-based dish consumed in Bangladesh and the eastern Indian states of (West Bengal and Assam). Pantha means soaked in water and Bhat means rice. Pantha Bhat is a rice-based dish prepared by soaking rice, generally leftover, in water overnight. On New Year’s Day Bengali eat this Pantha rice with red fringed white Sari, Punjabi pajamas and fried Hilsa fish(মাছ).Traditionally served in the morning with salt, onion, lemon etc. There are many benefits of this Pantha Bhat( rice). Getting up very early in the morning and eating Pantha Bhat on an empty stomach eliminates gastric problems. Increases digestion, keeps the stomach well. The study also said that eliminating gastric Bhat(rice) is high in nutritional value and helps strengthen body immunity and remove anemia and Iron deficiency. When normal rice is soaked for 8-12 hours in water, phytic acid reacts with water and creates lactic acid which increases the nutrient quality of rice,’’ states the report.
