Oxtail is a traditional Jamaican food that you usually eat on special occasions. Oxtail is the tail from an ox, steer, or bullock but my mom usually cooks an oxtail. My mom came to the U.S. for college and she has been making oxtail for occasions like Christmas, New Years, but you do not eat this constantly for dinner. First my mom marinates it with different spices and lets it sit for a day. Then the next day she steams it and we usually eat it with rice or plantain. I really love the dish because it has different varieties of ingredients. When I go back to Jamaica, I hope to eat more different foods.
