My parents immigrated from Haiti to the US in the past 30 years, my dad in 1988 and my mother in 2001. We still maintain many traditions being first generation immigrants, one of them being the New Years Soup Joumou. Every New Year (or whenever you feel like it in my family), we make joumou, which is made with winter squash, assorted noodles, beef, carrots and other random vegetables, sometimes potatoes and parsley. It is supposed to symbolize what Haitians ate under the occupation of France, and celebrates the liberation of Haiti from France each New Year.
