Making humitas

Humitas are a traditional, typical food of Ecuador, prepared with tender corn. First the corn is shelled, then it is ground in a hand mill. Once the corn dough is ready, we add a little anise, eggs, butter, a pinch of salt, sugar, and a little bit of baking soda. We prepare shredded cheese to put in the center of the humita. When everything is ready, the filling is placed and wrapped in corn husks and steamed for an hour or more, depending on the quantity.
