Eggplant Parmigiana
Every time I come back to Italy my mother prepares Parmigiana for me. Parmigiana is a traditional plate from south Italy, the principal ingredients are fried Eggplants, tomato sauce (cooked with olive oil , salt , black pepper, garlic ), basil, mozzarella cheese and Parmigiano. Usually this plate is eaten hot but the day after it is so delicious cold inside in the bread like a sandwich, it is to die for!!!I love this plate because it is organic, while biting in to this meal it take me back to my origins, my paternal side of the family are farmers , when we had holiday family reunions we have always embraced the fact that each family member would bring a different plate, typically my mother would prepare and bring Parmigiana . the smell it so simple and genuine and the taste involves me in an authentic atmosphere.
