Every year for my birthday, my mom makes eclairs. She would spend hours in the kitchen making them, and it was worth it.
If you don't know what an eclair is, it's a French dessert. Similar to a donut, but it's filled with French vanilla pastry cream and covered in chocolate ganache. 
In French, the word eclair means lightning, and some think that the name was inspired by how fast people eat them.. It was first made in the 19th century by a French chef named Marie-Antoine Carême.
One year, she wasn't able to make them due to her arthritis. Still, she went out of her way to go to a nice pastry shop and get them for me. The eclairs my mom makes are really important to me because it shows how much work she is willing to put in to make me happy. Even if its simply a dessert on my birthday, it symbolizes her love.
In the future, once I learn how to make them, I'll make them for my friends and family to pass on the tradition.
