Jiffy corn mix/Corn Casserole

Even though I've lived in New York for a long time I still think of the Midwest as my home, and remember growing up surrounded by fields, trees, and farms. Lots of the food we ate there I would call "country food" and one of my favorites is called corn casserole, which is made with Jiffy corn mix as one of the ingredients. This food reminds me of my parents who both grew up on farms, and my great-grandparents (who I never met), but who came to the US from Germany, Norway, and Poland. Corn casserole is more of a 'farm food' from the US, but some of the other foods we still eat as a family (like sauerkraut) come from these parts of the world.
